Santa Fe Chicken Salad Wraps

Sante Fe chicken salad wraps are loaded with a flavorful sante fe chicken salad, shredded lettuce, tomatoes, and creamy avocado. A few minutes to prepare the chicken salad is all you need for a no oven dinner that is sure to be delicious and filling!


I can’t help but laugh as I type this post for these santa fe chicken salad wraps. Because, in reality these should really be called ‘most-tortuous-grocery-shopping-trip-ever-$150 Santa Fe Chicken Salad Wraps’.

For real, I had all three kids with me because my oldest was home sick from school and the preschooler was off for the day. Now, I normally go shopping alone but I had to go to store to get the ingredients for these wraps. I kid you not, I spent $150 on that shopping trip!! I only had 7 things on my list. I can’t even tell you what I bought, but I am pretty sure it’s all my kids’ fault 🙂

I promise you that these wraps are not that expensive. Just don’t take your kids when you go shopping for the ingredients…..


Mix up an easy sante fe chicken salad; chicken (use a rotisserie for best results), canned corn, black beans, red bell pepper, and a delicious creamy dressing. Mix it all together and either use right away or keep it in the fridge until you need it.


Lay out your tortilla and layer your ingredients. We love these with shredded lettuce, diced tomato, and avocado slices. You could also add some shredded cheese and even some rice too —> I have added rice to these and it is really yummy!


Do you know how to roll up a buritto? I always laugh at my husband because he just kind of folds and squishes it and then just eats it. I googles ‘how to roll a buritto’ and then copied what they said 🙂 I actually did this a few years ago and have just always used that method. I’m a perfectionist when it comes to food. I can’t handle it all squishy and uneven (like my husband’s buritto rolling skills) 🙂 It has to be a tight, neat, clean roll…… I know, I’m crazy!?!?


I love wraps during the hot summer days because it means I don’t have to turn on my oven. Anything that helps keep the house cool is a win in my book. Technically if you choose to not use a rotisserie chicken then you do have to turn on something to cook the chicken. But, I highly suggest buying a rotisserie chicken (the best ones are at Sam’s Club or Costco) and making these wraps.

 These are so yummy, filling, but yet feel really light. I hope you enjoy them! Let me know if you try them!

Santa Fe Chicken Salad Wraps

You could also add some shredded cheese, and/or some cooked rice (any variety or style) to these wraps as well.


    creamy dressing
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • juice of 1 lime
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 3-4 green onions, diced
  • chopped cilantro, to taste (if I don't have any, I just omit the cilantro)
  • sante fe chicken salad
  • 1 rotisserie chicken, meat shredded or chunked (or about 3 large chicken breasts)
  • 1 red bell pepper, diced
  • 1 can corn (14.75 oz) any variety, I like using the fire-roasted corn
  • 1 can (15.5 oz) black beans, drained and rinsed
  • shredded lettuce
  • cherry or grape tomatoes, halved
  • 1 avocado, sliced
  • large (burrito size) flour tortillas


  1. Combine all creamy dressing ingredients in a bowl and mix together.
  2. In large mixing bowl, combine the chicken, red bell pepper, corn, and black beans. Pour the creamy dressing over top and mix until everything is combined and creamy.
  3. Use right away or allow to sit in fridge for 2-3 hours to get cold.
  4. When ready, heat up the tortilla to make them soft (so they don't tear) and then lay your desired ingredients onto the tortilla and then roll up like a burrito.

      Hi Kelly. Thank You 🙂 I am not sure of the calorie count, but if it’s something you are worried about then I would just replace the sour cream & mayo with plain yogurt and maybe use a low carb or whole grain tortilla. Greek yogurt is very bland so I would maybe up some of the spices to compensate for the lack of cream/flavor that the mayo and sour cream give. Hopefully that helps.     I made these tonight and I was skeptical that all of my children would like them. It is a rare meal that everyone is happy 😊. But to my surprise even my picky 9 year old, who usually hates main dishes, was half way through his wrap and said he liked it. So this is a great, nutritious meal. It’s also very versatile. I subbed with ingredients, I had on hand. Thanks!
