Easy Apple Cider Cookies Recipe

If you love apple cider and cookies – then these apple cider cookies are just what you need! Welcome the cooler weather and fall leaves with these cozy apple spiced cookies bursting with apple cider flavor thanks to a packet of apple cider drink mix.

Ingredients Needed

  1. Granulated Sugar
  2. Ground Cinnamon – This goes in the cinnamon & sugar topping.
  3. Pumpkin Pie Spice – This is not a pumpkin recipe but the pumpkin pie spice actually enhances those warm apple flavors. If you’re totally against it, apple pie spice can easily be substituted instead.
  4. Sugar Cookie Mix – This is the bag of dry ingredients. Do not follow the directions on the back, instead, just dump the entire contents from the bag into the mixing bowl.
  5. Apple Cider Drink Mix Packet – This is the small packet of apple cider mix that is mixed with hot water. One box comes wit several packets so there will be leftovers.
  6. Large Egg
  7. Salted Butter
  8. Full-Fat Sour Cream – Helps keep the cookies moist and gives them a rich and creamy texture.
  9. Hot Water
  10. Powdered Sugar

How To Make Apple Cider Cookies with Apple Cider Mix Packet

Preheat the oven to 375 degrees F. Line a rimmed baking sheet (12″x17″) with parchment paper, silpat liner, or spray with nonstick cooking spray. Set aside.

Stir together the sugar, cinnamon, and pumpkin pie spice in a small bowl with a fork. Set aside.

In a medium mixing bowl using an electric hand mixer, or use a stand mixer with the whisk attachment, combine the sugar cookie mix, pumpkin pie spice, and apple cider mix.

Add in the egg, softened butter, and sour cream. Beat until combined and creamy, and the dough is soft.

Scoop the dough out onto the prepared cookie sheet, using a medium cookie scoop (about 1.5 tablespoons of dough).

Use a spoon to generously sprinkle some of the cinnamon & sugar topping over the top of each cookie scoop.

Cook for 9-12 minutes or until the edges are set and the tops are golden brown. Remove the cookies from the oven and allow them to cool for 10 minutes on the cookie sheet before removing them to a cooling rack.

While the cookies are cooling, pour the hot water and the remaining apple cider mix into a small bowl and stir together with a fork until dissolved.

Mix the powdered sugar and 2-3 tablespoons of the apple cider until it creates a shiny glaze. Adjust the amount of liquid or powdered sugar in order to reach the consistency of glaze you prefer.

Use a fork to drizzle the apple cider glaze over the top of each cookie. Eat warm or cool to room temperature before eating.

Properly Storing Leftover Cookies

Room Temperature : These cookies are best stored at room temperature, sealed in an airtight container, cookie tin, or ziploc bag. Layer cookies with parchment paper or wax paper between the layers; this will help prevent them from sticking together and will keep their shape. Cookies are best consumed within 4-5 days.

Freezer : If you need to freeze the cookies, ensure they have completely cooled before placing them into a freezer-safe airtight container or freezer-safe Ziploc bag. Don’t forget to label and date the bag. Cookies can be frozen for up to 3 months. When you’re ready to enjoy them, remove them from the freezer and let them thaw at room temperature for a few hours. They can be enjoyed at room temperature or warm them up in the microwave to regain their freshness.

Recipe Tips For Success

  • Apple Cider Mix Packet : Read the directions carefully and note that you will only use 1 teaspoon of the mix in the cookies. Reserve the remaining for the glaze. You mix the remaining apple cider drink mix with the warm water and you won’t use it all. That’s normal! Don’t think you have to use all of it in the glaze. Use just enough to loosen the glaze so it’s a spreadable/drizzable consistency.
  • Don’t Overbake : The cookies should look done – like the edges will be set and lightly golden brown – but the cookie itself should still be a pale color. If the dough on top of the cookie looks raw and wet still, then cook them for 1 minute more. Don’t overbake them or else they will be crispy once cooled.

  • 1/2 cup granulated sugar

Apple Cider Cookies

  • 1 bag (17.5 oz) sugar cookie mix
  • 1 packet (.74 oz) apple cider mix (only 1 teaspoon for the cookies)
  • ½ teaspoon pumpkin pie spice
  • 1 large egg
  • 3/4 cup full-fat sour cream
  • 1/2 cup (1 stick) salted butter softened

Apple Cider Glaze

  • 1 cup powdered sugar
  • 3/4 cup hot water
  • remaining apple cider mix from the packet

Instructions

The packets are just one envelope of the drink mix. It usually comes in a box of 8 of them. Just use one of the packets inside the package.

  1. Mine ended up a little bread-y 🙁 Flavor was good though so I might try again with a little less sour cream. I thought the dough was a little loose so I probably should’ve just added the sour cream a little at a time until it had the right consistency. The cider mix in the glaze was really good!
