Easy S’mores Brownies Recipe
You’ll love this s’mores brownie recipe with all the classic smores flavors, but in brownie form, without the campfire! Gooey brownies sit atop a graham cracker base, and then you have a mini marshmallow layer, and of course the best part… melted milk chocolate bars on top!
This recipe starts with a boxed brownie mix so it’s simple to make. I love using short-cut ingredients in any recipe because it not only saves time, but it makes the recipes approachable so that anyone can make them – like these Brownie Mix Cookies and Easy Mississippi Mud Bars that both start with a box of brownie mix.
Ingredients Needed
Graham Cracker Crust Ingredients
- Graham Cracker Crumbs : You can either purchase a box of graham cracker crumbs from the store or place whole graham cracker sheets into a food processor and process until finely ground.
- Granulated Sugar
- Melted Butter : I prefer using salted butter but unsalted butter can be used as well.
Fudgy Brownies Ingredients
- Boxed Brownie Mix : Use your favorite one! Milk chocolate, dark chocolate, or chocolate fudge will all work.
- Mini Marshmallows : Gooey marshmallows make up the marshmallow layer for the s’mores brownies.
- Milk Chocolate Bars : Like the Hershey brand milk chocolate bars that can be broken into squares.
How To Make This Easy Brownie Recipe (Printable Recipe Card)
Preheat the oven to the time specified on the back of the brownie mix box. Spray a 9×9-inch square baking dish with nonstick cooking spray. Set aside.
Make The Graham Cracker Crust : In a mixing bowl, stir together the graham cracker crumbs, sugar, and melted butter until well combined. Firmly press the graham cracker mixture into the bottom of the pan to form an even crust layer.
Make The S’mores Brownies : Prepare the brownie mix according to the box instructions (typically it calls for egg, oil, and water). Pour the brownie batter over the graham cracker crust, making sure to spread it out evenly.
Bake according to the instructions on the back of the brownie mix box, about 40-45 minutes.
Remove the pan from the oven and immediately sprinkle the mini marshmallows over top the brownie layer, and then place the milk chocolate pieces over top the marshmallows. Sprinkle the reserved tablespoon of graham cracker crumbs over top.
Broil on high for 1-2 minutes to toast the marshmallows until golden brown and slightly melt the chocolate squares.
Allow the brownies to cool completely, at room temperature, before slicing and serving.
How To Store Leftover Homemade S’mores Brownies
Store the brownies in an airtight container, or cover the pan with plastic wrap or a lid, at room temperature for up to 3 days. Store the brownies in a single layer to prevent them from sticking together or becoming misshapen.
What Are Some Substitutions I Can Make?
- Brownie Mix : Use any chocolate brownie mix you love! Dark chocolate, milk chocolate, chocolate fudge, sugar-free, etc.
- Milk Chocolate Bars : Instead of using chocolate bars, you can use chocolate chips or chocolate chunks. Semi-sweet, milk chocolate, dark chocolate, or mini chocolate chips will all work well in the smores brownies. You could even try using white chocolate chips or peanut butter chips for a different flavor, or try using chopped Reese’s peanut butter cups.
- Butter : Salted butter, unsalted butter, margarine, or a dairy-free butter alternative will all work well in the graham cracker crust.
Recipe Tips
- For easier removal and cutting, line the pan with parchment paper instead of cooking spray. I like to spray the pan first and then press the parchment paper into the pan (the spray helps the paper stick to the pan).
- While broiling, keep an eye on the brownies as they bake, as the marshmallows can quickly burn.
- When layering the marshmallows and chocolate pieces over the brownies, distribute them evenly to ensure a good mix of flavors in each bite.
- Allow the brownies to cool completely, on top of a cooling rack at room temperature, before slicing and serving. This will make them easier to cut too. If you prefer gooey brownies then eat and slice them while the brownies are still somewhat warm.
- Place the cutting knife into a glass of hot water before cutting the slices of brownie for serving. Dry the knife and cut as usual. Using a warm knife will help you get clean cuts through the marshmallow goodness.
