Menu Plan Monday is a brand-new series on Together as Family that brings you delicious and family-approved dinner ideas for the week. Each menu includes six dinners plus one tasty dessert to enjoy!

This week my kids are off from school for two days! I have to be honest, I know they love the break from school, but my kids are so high maintenance, haha! I never plan on doing anything or getting anything done the days they are off from school – cause I know I don’t stand a chance of getting it done.

I know I shared last week about my daughter’s swim tryouts. Well she made the club swim team! They actually placed her in the higher group for her age – the CHAMPS because she is just that good at everything she does. She is truly incredible and amazes me with what she can accomplish. Its associated with team USA swimming and it’s a club swim team called the UVRays. And when I say I did not realize the time commitment, I meant to say that this girl swims 5x per week for 1.5 hours each day. And did I mention her practices are a 30 minute drive away…. yea. She absolutely loves it but she’s so tired and hungry all the time. Which is why I made my Steel Cut Oatmeal Energy Bites twice this past week. If you’ve got kids in sports then they’re a must-make for a good protein and energy source for active athlete kids.

My other daughter starts tennis this next week and then my youngest, my 7 year old, is starting flag football. So we are going to be busy with my husband in one place and me in the other. I wouldn’t want it any other way. Even though I don’t get anything done, and I am always in the car, I wouldn’t trade this time with my kids for anything.

MONDAY

SLOW COOKER SALISBURY STEAK MEATBALLS

These slow cooker meatballs are one of my newer recipes and they’re already one of the most popular recipes! This recipe uses frozen meatballs so prep time is so quick & easy. Serve over some Cream Cheese Mashed Potatoes.

TUESDAY

SHEET PAN CILANTRO LIME CHICKEN

Chicken breasts marinate in a simple cilantro lime marinade and then they’re baked on one sheet pan in the oven. I serve the chicken over some Cilantro Lime Rice and then topped with all our favorite burrito/taco toppings; shredded lettuce, Pico de Gallo, guacamole, sour cream, and shredded cheese.

WEDNESDAY

CHICKEN BACON RANCH PASTA

A simple weeknight meal with cheesy pasta, bacon, and lots of ranch flavor! This is a heavier and richer meal so I always serve some fresh fruit on the side like sliced strawberries, pineapple, and kiwi slices. Whatever your family likes.

THURSDAY

TACO RING

Enjoy this delicious twist to classic tacos with a crescent roll taco ring stuffed with taco seasoned ground beef and cheese.

FRIDAY

LEMON CHICKEN ORZO SOUP

Tender shredded chicken, orzo pasta, fresh vegetables, in a perfectly seasoned lemon chicken broth base.

Kitchen’s Closed! Go do something fun or have a leftover dinner at home.

SUNDAY

DESSERT OF THE WEEK

HOT FUDGE CAKE

This chocolate lover’s dessert makes its own hot chocolate fudge while it bakes in the oven. My family loves this served with a scoop of chocolate chip ice cream on top!
