Tex-Mex chicken is made in the slow cooker with only 5 easy ingredients plus some seasonings! Set it and forget it dinner that is ready when you are and it’s healthy & nutritious. Serve as rice bowls, inside burritos, on top of nachos, or any other way you want.
TEX-MEX CHICKEN RECIPE
I am so in love with this tex-mex chicken! Not only is it an easy, set it and forget slow cooker meal, but it’s also so simple with only 5 ingredients plus some seasonings.
You’ll need boneless skinless chicken breast, taco seasonings (or you can use a packet), can of corn, salsa, and 2 bell peppers. I always tend to use a orange pepper and a yellow pepper. I love all the colors!
To make this you cut the chicken into bite-sized pieces. Not to small because you don’t want the chicken to dry out. I aim to cut the chicken into large bite-sized pieces. About 2″ pieces. No need to get a ruler and measure 🙂 just eyeball it and cut large bite-sized pieces.
Put the chicken into a bowl and sprinkle the seasonings over it. Mix it all together until the chicken is coated. Dump the chicken into the slow cooker.
Add a can of drained corn, 2 chopped bell peppers, and salsa. Give it a light stir and cover with the lid. Cook on LOW heat for 5-7 hours.
My tips for making this recipe
Use a really good quality salsa that you love. I really like the fresh salsa from Costco or Sam’s Club. But if you are looking for one in the grocery store, try and get a fresh made salsa that is usually in the produce section by the packaged guacamole and what not. But if you do use jarred salsa, it will still be delicious!
I don’t like large chunks of vegetable in any dish, so I always cut my bell pepper fairly small. It is in the slow cooker long enough that it will soften up but even the small pieces won’t get too soft or soggy.
I prefer to use the separate seasonings instead of the taco seasoning packet but you could always just use 1 packet of taco seasoning instead of the seasonings if that’s what you prefer.
If you want some spice use a hot salsa or add some cayenne pepper.
How to serve tex-mex chicken for dinner
- Serve over cilantro lime rice or Mexican rice for rice bowls. Top with sour cream, cilantro, cheese, and avocado. This is usually how I serve it.
- Serve inside burritos and add your favorite burrito toppings.
- Have a nacho bar! Layer chips, chicken, and then all the toppings.
- Soft tacos or crunchy corn tacos

Slow Cooker Tex-Mex Chicken
- 4 boneless, skinless chicken breast (about 2 lbs)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 can (15 oz) corn (drained)
- 2 sweet bell peppers (chopped small)
- 1 1/2 cups salsa
Spray the insert of the slow cooker with cooking spray.
Cut chicken breasts into large bite-sized pieces and put into a mixing bowl. Add the garlic powder, onion powder, chili powder, cumin and salt. Mix together until chicken is coated. Dump into the slow cooker.
Add can of drained corn, 2 bell peppers that are chopped small, and salsa. Stir together and cover with the lid.
Cook on LOW heat for 5-7 hours.
Stir the chicken mixture and serve as desired. We love this as tex-mex chicken rice bowls. Layer rice, tex-mex chicken, and your favorite toppings. You can also make tacos, burritos, or even nachos! So many options.
Calorie count is for a recipe that serves 8. Depending in how you serve this chicken, you could get more or less depending on what you make with it. We can get about 8 rice bowls when I serve this. Calories are only for one serving of the chicken mixture. It does not include rice and additional toppings.
I love color so I use an orange and yellow bell pepper in this recipe. You can use two of the same color, or switch it up. Orange, yellow, red, or a green pepper will work.
You will need about 2 lbs of chicken for this recipe. If the chicken breasts are larger than you may only need 3 of them. If they're smaller, you will need 4 of them.
