This white chocolate coconut cream pie was made from sheer desperation to try and escape my ‘summer slump’. You know how people usually have a winter depression because there is no sunlight and the days are short? Well, I am pretty sure I do that with summer. The heat, the sun, the humidity, my kids home all day fighting over breathing air (yes, apparently that’s a thing with them now)Β and fighting over food like they’ve been starved their whole life—- > this is my life people!

I just want to hibernate in my house with the a/c blasting all day, in my sweats, and make pie! Is that too much to ask πŸ™‚ I kid. Really. I love my kids but I seriously think I have summertime depression…..

This white chocolate coconut cream pie is no bake and it’s already made the list of my favorite pies. It uses a store-bought shortbread crust and if you are against that, then go ahead and make your own or make the crust that was part of the original recipe. I adapted the recipe to make it easier and to utilize the store-bought crust. I am normally all for homemade, but when it comes to crust I actually prefer the store bought ones because they hold up better to the cream fillings.

My favorite part of this pie is the layer of white chocolate on top of the shortbread crust. It’s then topped with a creamy & cool coconut pudding using a box of instant pudding mix. You then melt the remaining white chocolate and combine it with some freshly whipped cream. Which by the way, white chocolate whipped cream is f-a-b-u-l-o-u-s! I’ve never had it but now I am wondering why??

Top with some toasted coconut and white chocolate curls if wanted. Totally optional but it’s really pretty.

As with most cream pies, like this triple layered lemon pudding pie or this {no bake} black forest cheesecake pie, I prefer to refrigerate it overnight. That way it gets really cold, the pie holds together, and the flavors can combine. If you’re short on time just make sure you refrigerate it for at least 4 hours. I hope you love this one as much as we did!

Ingredients

  • 1 store-bought, prepared shortbread crust
  • 1 package (4 oz) white chocolate baking bar, divided
  • 1 package (3.4 oz) coconut cream instant pudding mix
  • 1 3/4 cup whole milk
  • 1 1/4 cups heavy whipping cream, divided

Instructions

  • Microwave 2 oz of white chocolate baking bar in small microwaveable bowl for 2 minutes. Stirring every 30 seconds. Once completely melted, spread onto bottom of prepared shortbread crust. Refrigerate for 15 minutes until chocolate is hardened.
  • Meanwhile, with a handheld mixer or a whisk, beat pudding mix and milk together for 2 minutes. Let sit for about 5 minutes until thickened. Pour over the hardened white chocolate in the pie. Refrigerate until ready to add next layer.
  • *** the white chocolate mixture will bubble over in the microwave if your bowl is too small. Use a large bowl or a glass measuring cup with tall sides ***
  • Microwave remaining white chocolate baking bar and 1/4 cup heavy whipping cream in a microwaveable bowl for 2 minutes. Stir until chocolate is melted and mixture is well blended. Let cool for 20 minutes.
  • Beat remaining heavy whipping cream in a large bowl on high speed until stiff peaks form. Add the melted white chocolate mixture to the whipped cream and stir together with a spatula. Spoon over the coconut pudding filling in the pie.
  • *** I like to save about 1/2 cup of the whipped cream to pipe on top of the pie before serving. This is optional ***
  • Let refrigerate for at least 4 hours or overnight.
  • Serve with toasted coconut and/or white chocolate curls.

Notes

For easy white chocolate curls take a vegetable peeler and a white chocolate bar, peel down the sides of the chocolate bar to make curls.

To toast coconut: Heat oven to 375 and place 1/2 cup coconut on a baking sheet. Toast in the oven for about 10 minutes, stirring every few minutes until toasted.
