Cilantro Lime Rice

Delicious toasted rice, cooked to perfection in a flavorful chicken broth full of spices, lime & cilantro. The perfect side dish to any Mexican meal, a great filling for burritos, and perfect for a taco salad.

Cilantro Lime Rice-

 It’s not secret by now that we are huge fans of Mexican food at our house. These taquitos are our favorite, pico de gallo is delish and so fresh, or just simple beans & rice, and we can’t forget these baked ranch chicken tacos. Seriously, we love it all!

I have made this cilantro lime rice more times than I can count. This rice has the perfect cilantro lime flavor and always turns out absolutely delicious.We all love it, well except for my oldest who for some reason hates rice. Can’t stand it. That stinks for him because one of his mom’s favorite foods to cook and experiment with is rice 😉

I like to use Jasmine rice for this, but I have used long grain white rice several times and it works great. I just prefer the texture and flavor of the Jasmine. I also use chicken base when I make this. Well, actually I use chicken base + water 99% of the time when a recipe calls for chicken broth. Here is the kind I use, I get it at Sam’s Club. Sometimes I also use this, any grocery store would have this. This is just in case you need a picture, I’m a very visual person so I know I would need a picture 🙂

Cilantro Lime Rice


  • 2 Tablespoons butter
  • 1 1/4 cups uncooked white rice
  • juice and zest 1 large or 2 small limes
  • 2 1/4 cups chicken broth
  • 2 Tablespoons finely chopped cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin


  1. In saucepan over medium-high heat melt the butter with rice, stirring frequently.
  2. Once butter is melted, add in the rest of the ingredients and stir.
  3. Bring to a boil, reduce heat to low, cover and cook for 20 minutes.
  4. Let sit for a few minutes and then fluff the rice and serve.
